Today I am excited because my husband is home for 2 whole weeks before he starts his summer courses. This, of course, means more cooking for me. Not exciting. I cook everyday, don't get me wrong. But when my husband isn't home, my meals tend to be kind of...boring. Like lame-o plain chicken with steamed veggies-that sort of boring. Thankfully, I have a son who loves FOOD, and never complains about what I feed him. These next two weeks, however, I'll have to step it up a notch, and put in some extra effort into my family's meals.
Recently, I started thinking that it might be easier (and cheaper??) if I started planning our meals for the entire week, then go grocery shopping once a week to buy the things we don't already have and that's it. I'm so sick of going to the grocery store 3-5 times a week-it's exhausting and kind of depressing seeing all the inflation nonsense.
So this is week one. I have many easy and delicious meals planned for this week that I'm excited to share. All paleo-friendly, of course. You'll never see me posting recipes for junk food on this blog. Neither will you see me post a recipe that's not easy. Lucky you, huh? And lucky hubby!

Okay here's a recipe I tried last week. I've never heard my husband say "This is REALLY good" as enthusiastically as he did the day I made this. This isn't one of the meals for this week but I wanted to share this recipe, as it's one of my favorites as well (to eat and to cook!) I'm pretty sure sun-dried tomatoes are the secret ingredient to food awesomeness!
Sun Dried Tomatoes & Chicken Bake
Ingredients:
-2 lbs. boneless chicken breasts, cut in half
-black pepper and sea salt to taste
-8.5 oz jar of julienne sun dried tomatoes
-2 tbsp of olive oil (optional)
-8 garlic cloves, chopped
-1 tbsp dried basil
Pre-heat oven for 375 degrees on Bake. Place your chicken breasts in a big casserole dish. Add pepper, sea salt, and basil evenly. Add the chopped garlic.
Then evenly pour the sun-dried tomatoes over the chicken, along with the oil in the jar. Optional: If you like it more oily, like I do, add olive oil. But you don't need it. Cover the entire dish with foil. Place in the oven for 20 minutes.
Then after 20 minutes, take the foil off. And bake for another 15 minutes. Let it cool and serve! If the tomatoes look burnt or black, no worries, they still taste great!
