Thanks to my paleo lifestyle, I've finally made my momma proud and learned how to cook. But just because I can cook, doesn't mean I enjoy making lavish, fancy meals for my family everyday. Sometimes the meals I cook can be kind of blah. Can you blame me? I cook 3-4 meals a day. It gets old. But I'm proud to say that my "skills" are improving. Here's a fool-proof recipe that is easy even for the most culinary-challenged. (What can be easier than loading a crockpot and walking away?) Basically, clean food that's not so boring. And easy recipe = happy housewife!
What you need:
1. Crockpot
2. Whole free-range chicken (ours was about 6 pounds)
3. One sliced onion
4. 1 tsp sea salt
5. 1 tsp white or black pepper ( I prefer black)
6. 2 tsp paprika
7. 1 tsp cayenne pepper
8. 1 tsp poultry seasoning
9. 1 tsp garlic powder
First: Remove giblets from your chicken. Wash your chicken and pat it dry with paper towels. In case you're still new to your domestic side ( like me) and you want to google what 'giblets' are (like me), here's a photo of what they should look like to save you some time.
Then: In a bowl, mix all your spices together. Then spread & pat it onto your chicken evenly.
Lastly: Put your slices of onion into the crockpot. And then place your spiced chicken on top of the onion. The chicken will cook in its own juices. Close the lid. Set the settings on your crockpot depending on when you want to eat it (we set it for 4 hours).
I started cooking right before we left for a ball game. It was ready when we came back, just in time for a great fall-off-the-bone chicken dinner. This was enough for the 3 of us and there's enough left over for the next day's lunch too.
