Today, we enjoyed the Florida sunshine in our front yard with our fave Disney character-Lightning Mcqueen!
I had to re-introduce Jason to Mcqueen at first.
And then, they were BFF.
And as for food, I am kind of going the cheap (lazy) route. An oven-roasted whole chicken that could feed a family of three for lunch and dinner. I know there are plenty of recipes online on how to roast a chicken. This is just the way I do it that's easy, yummy and healthy for my family.
What you need:
-Whole free-range chicken (ours was 4.5 pounds) washed, patted dry with paper towels
-3 bay leaves
-1 tsp black pepper
-1/2 T sea salt
-1/2 T poultry seasoning
-favorite herbs: I used 1T of oregano and 1T basil
-1T extra virgin olive oil
-slice of lemon to fit into the chicken
-OPTIONAL: slices of onion (as much as you want to fit into the cavity of the chicken)
Pre-heat oven on Bake for 450 degrees. Cut your lemon in half. You will only need one of the halves. Squeeze the juices from the lemon slice all over your chicken. Place your bay leaves, onion slices and lemon into the cavity of the chicken.
In a mixing bowl, mix all your spices and herbs together in olive oil. Pat your seasoning onto your chicken. Place your chicken in a glass baking dish, belly down and cook for 75 minutes.
The skin should be perfectly brown, crispy and full of flavor. Serve with your favorite veggies. Who says you can't feed a family of three for cheap without hitting a fast food joint? Enjoy!
